Kolhapuri Chicken
Chicken is my all time favorite . Kolhapuri chicken is a spicy , tasty maharastrian dish. for those chicken lovers like me, who are longing to feel a different taste in chicken curry,can try this delicious dish.
Ingredients :
Oil - 5 tbsp
Cumin Seeds - 1 tbsp
Pepper corns - 1 tbsp
Green Cardamom (elachi) - 3
Cinamon stick (dalchina chekka) - 1 inch
Cloves (lavanga) - 5
bay leaf - 1
Garlic - 2
Dry coconut powder - 2 spoons
Coriander seeds (dhaniyalu) - 2 spoons
Sesame seeds (Nuvvulu) - 1 spoon
Poppy Seeds (gasagasalu) - 1 spoon
Red chilli powder - 1 spoon
Salt - 1 spoon
Turmeric Powder - 1/2 tbsp
Onions - 2
Tomato - 1 (big)
Marination
Chicken - 1/2 kg
Red chilli powder - 1 tbsp
Salt - 1 tbsp
Ginger - Garlic Paste - 2 tbsp
Garam Masala - 1 tbsp
Lemon Juice - 2 tbsp
Method
Note :Marinating the chicken is very important to get a smooth and juicy chicken.

Coriander seeds (dhaniyalu) - 2 spoons

Marination
Chicken - 1/2 kg
Red chilli powder - 1 tbsp
Salt - 1 tbsp
Ginger - Garlic Paste - 2 tbsp
Garam Masala - 1 tbsp
Lemon Juice - 2 tbsp
Method
- Wash chicken pieces and marinate them with ginger garlic paste, red chilli powder , garam masala powder , salt, lemon juice to chicken. Rub well on chicken pieces and marinate for 30 mins
- Meanwhile prepare masala for kolhapuri chicken. Place a kadai on stove , heat up oil then add cummin seeds , whole spices like green cardamoms , cinamon , cloves , bay leaf , coriander seeds , sesame seeds , poppy seeds , chopped garlic and last dry coconut powder .
- Cook them until they change their colour.
- Now add sliced onion and cook till it gets light brown color
- Then switch of the stove and let it cool down and then grind this onion masala into smooth paste (if needed add small amount of water while grinding)
- Add chopped tomatoes to blender separately and grind it to smooth paste and keep it aside.
- In a kadai , add 2 tbsp of oil and add chicken. Cook this marinated chicken for 5 mins and keep it aside.
- Now it is time to prepare gravy . In a kadai , heat up oil and add onion masala paste ,saute for 1 min,
then add tomato paste. Cook this ground masala for 5 mins.
- Add red chilli powder , salt (1 spoon) , turmeric powder and mix it well.
- Now add chicken pieces and mix well with masala . .
- Add water to a desired consistency and checkout salt , cover with lid and cook for 20 - 25 min in a medium flame or until the chicken gets tender and desired consistency.
- Garnish with some coriander leaves.
Note :Marinating the chicken is very important to get a smooth and juicy chicken.
