Vaamu Annam / Rice with carom seeds / Ajwain rice / Omam rice

Vaamu / ajwain gives relief from cold and cough and is supposed to have many medical values associated with it. This recipe can be made by leftover rice.
It is very handy for those who want to prepare a quick dish for lunch box. It is simple , healthy and good for digestion
           


Ingredients :

Cooked rice - 2 cups
Garlic pods (chopped) - 4
Red chillies - 3
Mustard seeds (aavalu) - 1/4 tbsp
Jeera - 1/4tbsp
Vaamu / Omam / Ajwain - 1 tbsp
Curry leaves - few
Cashew nuts - 8
Pea nuts - 10
Salt - to taste
Oil - 3 tbsp


Method:


  • Heat oil in a pan and fry cashews and peanuts in a medium flame. When they turn to golden brown remove from oil and keep them aside.                                  
                     
  • To the same oil add mustard seeds, jeera , ajwain seeds.      
  • When they start spluttering , add red chillies , chopped garlic and curry leaves. Fry for a while and add salt (per taste) and mix well.
  • Add cashews and pea nuts.
  • Finally add rice and mix well (check out salt) and switch off the stove.


Vaamu annam or ajwain rice is ready to serve.
