  Chicken Pulao is a simple one pot recipe where you need not marinate the chicken pieces and need not place the chicken as layers in rice. It is very easy to prepare.When i have a very little time left to prepare lunch/Dinner, I usually go for it.




Ingredients for Chicken Pulao:



Basmati Rice                     
- 2 cups
Chicken                             
- 1/2 kg
Coriander leaves               
- Fist full
Mint leaves                      
- Fist full
Curry leaves                     
- few
Bay leaf                            
- 1
Cardamom (Elachi)          
- 4
Cloves (Lavangalu)          
- 6
Cinnamon Stick (Dalchi)
- 1 inch
Water             
 - 3 cups
Onions                               
- 3 medium
Tomato                              
- 2 medium
Green Chilly          
- 2
Garam Masala           
- 2 tbsp
Red Chilly Powder     
- 1 1/2 tbsp
Salt                            
- As required
Ginger garlic paste    
- 1 1/2 tbsp
Ghee                        
- 3 tbsp
Oil
- 3 tbsp
Curd
- 1/4 cup



Method:
  • Clean and wash chicken pieces. Keep them aside.
            



  • Wash and soak biryani rice first , then start preparation.
               
  • Chop your veggies and keep them aside.
                  
  • Heat ghee and oil in a cooker. Add whole masala like bay leaf, cardamoms, cinnamon, cloves.
                          
  • Then add coriander leaves, mint leaves,curry leaves and green chillies. Saute this for 1 min.
                      
  • Add your sliced onions and salt. Fry until they are transparent.
             
  • Add ginger and garlic paste. Fry this for 3-4 mins in medium flame.
                 
  • Now add finely chopped tomatoes.
                      
  • Fry until tomatoes get mushy texture. Then add chicken pieces. 
                  
  • Cook this covered until the chicken loses all the water and gets white color. Now add garam masala and red chilli powder. Mix well and cook this for 5 mins.
                   


  • Add curd /yogurt and mix well.
             
  • Add water and checkout salt (Add as needed)
               
  • When it starts boiling, add your soaked basmati rice. Mix well and cover with a lid. Don't stir continuously as your pulao will end up with mushy texture.
                    
  • Now bring you rice mixture to boil and reduce flame.
         
  • Cover the presuure cooker lid and cook this on a low heat for 10 mins.
                 
  • Switch off the flame . After 10 mins, open the pressure cooker and fluff it with a fork.
                   


Your yummy chicken pulao is ready to serve. 




Garnish with coriander leaves and serve hot with raita or any side dish.
