Easy vegetable biryani / How to make vegetable biryani / Simple vegetable biryani in pressure cooker
 
                   



      Making Vegetable biryani in pressure cooker is a very easiest and quickest  method and delicious too. This one pot vegetable biryani is very handy recipe for lunch box with different kind of vegetables.


     


Ingredients:

Basmati Rice                                 - 1.5 cups
Potatto                                            - 1 Big
Beans                                              - 10
Green Peas                                    - 1/4 cup   
Carrot                                            - 2
Onions                                           - 2 big
Green Chilli                                    -  3
Tomato                                           - 1
Bayleaf                                           - 2
Cinnamon Stick                               - 1/2 inch
Cardamom                                        - 4
Cloves                                               - 5
Pudeena / Mint / Coriander leaves - Handful
Oil                                                   - 2 tbsp
Ghee                                               - 2tbsp
Salt                                                  - As per taste
Ginger garlic paste                         - 1 tbsp
Water                                             - 2.5 cups




Method :


  • Wash and soak biryani rice first , then start preparation.
            

  • In a pressure cooker heat oil and ghee. Add bay leaf , cinnamon stick , cloves , cardamom.          
                 
 
  • When they start spluttering , add sliced onions , green chillies and saute well.
                

  • When the onions starts changing color , add ginger garlic paste and fry it for 2 mins.
         

  • Add mint and coriander (cilantro) leaves and saute well.
               
              
  • Add your veggies. Here I added carrots , beans , green peas , potato (You may add veggies like cauliflower , broccoli , baby corn , sweet corn as you wish ) and fry this for 2 mins.
         

  • Add tomatoes and mix well.
                 

  • Add water and bring this to boil. Add salt and check out taste.
              
                 


  •  Add soaked rice.
                 

  • Mix well and cover with lid. Don't stir continuously  as the rice flakes may break.
       

  • Now bring this mixture to boil and reduce the flame.
    Cover the pressure cooker and cook it on a low heat for 10 mins. 
        

  • Switch off the flame. After 10 mins , open the pressure cooker and fluff it with a fork. 
              

Your yummy vegetable biryani is ready to serve.
Serve hot with any raita or side dish.
