Method:
- Clean and cut mushrooms .
- Soak eight broken cashew nuts in warm water for 2 hours .
- Grind tomatoes and soaked cashews into smooth paste and keep it aside.
- In a pan heat oil and then add whole garam masala like green cardamoms, cloves , cinnamon stick and bay leaves.When they splutter add chopped onions.
- Add 1 tbsp salt and fry the onions until they become transparent.
- Add ginger and garlic paste and fry for another 2 mins.
- Now add cashew tomato puree. Mix well and cook this for 7-8 mins or until the oil gets separated.
- Add red chilli powder , garam masala and mix well.
- Now add chopped mushrooms.
- Mix well until the gravy gets properly coated to the mushrooms.Add the broken cashew peices.
- Cover with a lid and cook for 5 mins in a low to medium flame.
- Now open the lid and add the water depending on the gravy consistency you like. Checkout salt.
- Cover with lid and cook until gravy thickens.
- Mushroom cashew / kaaju masala is ready to serve.
