Here is the step by step procedure to make delicious mushroom cashew/kaaju masala recipe

Ingredients:



Button Mushrooms
1 cup chopped
Onions

Tomatoes

Cashews / Kaaju

Garam masala
½ tbsp
Red chilli powder
1½ tsp (as per taste)
Green cardamom (elachi)

Cloves

Bay leaf

Cinnamon stick
½ inch
Ginger garlic paste
2 tsp
Oil
3 tbsp
Salt
As per taste
 
Method:


  • Clean and cut mushrooms .

  • Soak eight broken cashew nuts in warm water for 2 hours .
                     

  • Grind tomatoes and soaked cashews into smooth paste and keep it aside.
                    

  • In a pan heat oil and then add whole garam masala like green cardamoms, cloves , cinnamon stick and bay leaves.When they splutter add chopped onions.
               

  • Add 1 tbsp salt and fry the onions until they become transparent.
              

  • Add ginger and garlic paste and fry for another 2 mins.
                        

  • Now add cashew tomato puree. Mix well and cook this for 7-8 mins or until the oil gets separated.
               

  • Add red chilli powder , garam masala and mix well.


  • Now add chopped mushrooms.


  • Mix well until the gravy gets properly coated to the mushrooms.Add the broken cashew peices.


  • Cover with a lid and cook for 5 mins in a low to medium flame.
  • Now open the lid and add the water depending on the gravy consistency you like. Checkout salt.


  • Cover with lid and cook until gravy thickens.


  • Mushroom cashew / kaaju masala is ready to serve.
