Toddy palm pulp cake | thati pandu cake | తాటి పండు రొట్టి || #thatipanduCake || #toddypalmPulpCake

Ingredients : Thatipandu/toddy palm fruit - 1 Jiggery/bellam - 1 cup Grated coconut - 1/2 cup Rice ravva - 1cup Ghee - 2 spoons Rice flour - 1tbsp Salt - 1/4 tsp Cardamoms/ ilachi - 3 Sugar -1.5 tbsp Procedure: *Add water to rice ravva and wash well. soak in water for 1hour.After that discard water. * place charcoal on a ladle with holes on low flame. Heat the charcoal for 10 mins. Toddy*place the toddy palm fruit on got coal for 10 to 15 mins and roast. Remove from heat and allow it to cool down. * remove the skin of toddy palm fruit skin. *grate the fruit and extract the smooth pulp into bowl . keep it aside. *in a mixing bowl, add drained rice ravva,1 cup Jaggery, 3/4 cup grated coconut and toddy palm fruit pulp. *Mix all well until the jaggery dissolves in the mixture. *grind 3 cardamoms and 1.5 tbsp sugar into fine powder. * In the cake mixture add 1/2 tsp salt and sugar. Mix it well. Cake mixture is ready. *here I'm taking traditional cake maker in which we bake cake on stove. *in bottom fill with sand and place it on stove with very low flame. *in a cake tin add ghee and spread all over the tin . *add 1tsp Rice flour and spread .in dusted cake tin,add prepared palm fruit cake mixture. *place this cake tin on sand tin which is on low flame. close the lid and cook on very low flame for 1 hour or until the outer layer turns into light brown. *remove from heat and keep it aside for 15 mins. Carefully flip on a plate .slice it and serve.
